With these wholesome ingredients, you will feel no guilt about the pat of butter you will add and the little pitcher of Highland County maple syrup you will pour over the pancakes. The pancakes are especially good with 1 cup of blueberries added. Davis and Grayson don’t care for blueberries in their pancakes–they requested chocolate chips instead. Pretty good! 1 3/4 cups buttermilk
2 eggs
1 cup whole-wheat flour
1 cup rolled oats
1 teaspoon baking soda
½ teaspoon salt
¼ teaspoon nutmeg (preferably freshly grated)
(1 cup blueberries)
In a large bowl, place buttermilk and eggs. Mix well. Add flour, oats, baking soda, salt, and nutmeg. Beat only until large lumps disappear.
Cook on a lightly greased skillet or griddle over medium-high heat. Turn when small bubbles appear. Remove when they stop steaming.
Makes about 16 4” pancakes.
