An amazing recipe from Mila Furman’s Girl and the Kitchen blog. Mila points out that potatoes are actually nutritious and good for you. She uses vegan butter for her version, but these potatoes are just as good using dairy butter. Fair warning, you may find yourself cooking “breakfast potatoes” at all times of the day and night.

1 pound small red potatoes
3 tablespoons butter
salt and pepper to taste
chopped parsley
Wash potatoes and place in microwave for 3-4 minutes until they are just soft to the touch.
Add the butter to a skillet and heat over medium-high heat.
Cut the potatoes into quarters and put in the skillet. Let each side cook for 2 minutes, then flip the potatoes carefully. When potatoes are browned, put on a plate. Season with salt and pepper. Sprinkle with parsley and eat immediately.
