From Paula Deen, an irresistible dip for special occasions. And any time I can get my hands on some crabmeat is a special occasion.
1 pound jumbo lump crabmeat
1 cup grated pepper jack cheese (4 ounces)
3/4 cup mayonnaise
1/4 cup grated Parmesan
1/4 cup minced green onions
5-6 roasted garlic cloves
(peel the cloves, put them on a 4″ x 4″ piece of alumnium foil, pour a teaspoon of olive oil over them, wrap them up in the foil, and bake at 350ºF for 45 minutes)
3 tablespoons Worcestershire sauce
2 tablespoons fresh lemon or lime juice
1 teaspoon hot pepper sauce
1/2 teaspoon dry mustard
salt and freshly ground black pepper to taste
Preheat oven to 325ºF. Combine ingredients in a casserole and gently stir until mixed. Bake 40 minutes. Serve hot with Ritz crackers or toast points. (Tell the garlic lovers about the roasted garlic cloves so they can be on the lookout for them!)
