Oatmeal Raisin Muffins

From the Basic Wholegrain Muffins recipe of Whole Foods for the Whole Family (1981). These muffins come together so quickly and are actually pretty healthy.

1 cup whole wheat flour
1 cup rolled oats
1 teaspoon baking soda
¼ cup brown sugar
1 teaspoon ground cinnamon
1/8 teaspoon ground cloves
½ teaspoon salt
½ cup raisins
1 egg, beaten
1 cup buttermilk
3 tablespoons corn oil or melted butter

Mix all dry ingredients thoroughly, including raisins.  Make a well in the center and add egg, milk, and oil.  Mix only until dry ingredients are moist.  Fill greased muffin pans half full and bake at 375°F for about 15 minutes.  Makes 12 to 16 muffins.

Note: for Blueberry Wholegrain Muffins, leave out the raisins and add 1 cup of blueberries.
