A recipe from Mariah Nugent, host with Dave Nugent of the great bed-and-breakfast Henson Cove Place in Hiawassee, Georgia. We have stayed at many B&B’s, and Henson Cove has the best breakfasts.
Seeing “Puffy Oven Pancakes” on Mariah’s kitchen chalkboard, and then getting to eat a Puffy Oven Pancake is a great way to start your day. Thank you, Mariah, for sharing your recipe.
4 tablespoons butter
1 cup 2% milk
2 teaspoons grated lemon peel
1 teaspoon vanilla
1 cup all-purpose flour
1/2 cup fresh blueberries
1/2 cup fresh strawberries
Divide butter among four 2-cup baking dishes. Place the dishes on a baking sheet. Heat in a 400°F oven until butter is melted.
In a small bowl, whisk eggs, milk, lemon peel, and vanilla. Whisk in flour until blended. Pour the batter over butter in each baking dish. Bake, uncovered, for 14-16 minutes or until golden brown and puffy.
In a small bowl, gently combine berries. Spoon onto pancakes. Dust with confectioner’s sugar.
