Tofu Scramble

Zada Jane’s Corner Cafe in Charlotte has a great tofu scramble. I’ve tried several recipes but this one, from The Complete Vegetarian Cookbook by America’s Test Kitchen (2015), is the best. Soft tofu is recommended. It’s important to get the tofu as dry as possible.

14 ounces soft or silken tofu, pressed dry with paper towels
1 1/2 teaspoons vegetable oil
1 shallot, minced
(1 small red bell pepper, cut into small dice)
1/4 teaspoon curry powder
3/4 teaspoon salt
freshly ground pepper
2 tablespoons minced fresh basil or other fresh herb

Heat oil in nonstick skillet over medium heat. Add shallot (and pepper if you are using) and cook until softened, about 2 minutes. Stir in crumbled tofu, curry powder, salt, and pepper and cook until tofu is hot, about 2 minutes. Off heat, stir in basil and serve.
