From Blue Apron. I was amazed that this delicious dressing subdued a huge tangle of thin-sliced kale into a well-behaved healthy salad, tastier than I had thought possible.
1 ripe avocado
1 lime
1 clementine
1 clove garlic, minced
1 jalapeño pepper, seeded, stemmed, and minced
3 tablespoons olive oil
Salt and freshly ground pepper to taste
Juice the lime.
Pit, peel, and halve the avocado. Thinly slice 1 half, place into small bowl and top with 1 teaspoon of the lime juice to prevent browning. Make sure all surfaces of the avocado slices are mixed with the lime juice. Season with salt and pepper. You will use these slices to garnish your salad.
Place the other half of the avocado in a large salad bowl and add the rest of the lime juice. Using a fork, mash the avocado.
Zest the clementine and add the zest to the large bowl. Juice the clementine and add the juice to the large bowl.
Add the minced jalapeño and garlic to the bowl. Add the olive oil. Season with salt and pepper. Mix the dressing well.
Now you can use your dressing for a salad. It looks like a lot of dressing but it is perfect for a bunch of kale with stems removed and thinly sliced. Mix the dressing into the kale and allow it to marinate for at least 10 minutes before serving. Garnish with the sliced avocado.
