Many years ago I fell in love with Dannon Lemon Yogurt. Now I am in love again, with a savory lemon yogurt that is quite different from the sweet Dannon yogurt. This yogurt was suggested by Blue Apron as an accompaniment for some delicious vegetarian fritters. It is a nice substitute for sour cream.
1 cup plain yogurt
grated peel from 1 lemon–use a microplane grater
juice from 1 lemon
1/2 teaspoon salt
1/2 teaspoon freshly grated pepper
2 tablespoons olive oil
Mix ingredients together. Drizzle a little more olive oil on the surface. Serve and enjoy with black bean soup or just about anything you like.
