Lots of baked cauliflower and cheese recipes circulate on the web, but many of them require you to make a cheese sauce. Sometimes we don’t have that kind of time or patience. I’m delighted to share this quick recipe for seriously good cheesy cauliflower. It’s adapted from Pumpkin ‘n Spice’s blog.
1 head fresh cauliflower separated into florets
2 tablespoons olive oil
1 garlic clove, chopped (or 1 teaspoon garlic powder)
½ teaspoon Italian seasoning (or pinches of dried basil, oregano, and thyme)
Salt and pepper to taste
1 cup (4 ounces) shredded sharp cheddar cheese
Preheat oven to 425°F. Lightly grease a 9-by-13-inch baking dish or pan with oil or butter. Set aside.
Place cauliflower florets into a large bowl. Add olive oil, garlic powder or garlic, Italian herbs, salt, and pepper. Stir to coat, making sure each piece is covered. Spread cauliflower in an even layer in prepared dish.
Bake for 15 minutes. Turn cauliflower over, top with cheeses, and bake for another 12-15 minutes, or until cauliflower is lightly golden. Serve immediately.
