From Mother’s in the Kitchen (1971). This is a delicious bread, just sweet enough with the sour pop of cranberries and the fragrance of oranges.
2 cups unbleached all-purpose flour
½ teaspoon salt
1 ½ teaspoons baking powder
1 cup sugar
2 teaspoons baking soda
2 tablespoons hot water
1 egg, beaten
1 tablespoon butter, melted
1/4 cup orange juice
1 cup cranberries
1 orange, seeded and chopped in food processor
(½ cup nuts)
Mix flour, salt, baking powder, and sugar, leaving a well in the center. Dissolve baking soda in the water. Add it along with the egg, butter, and juice to the flour mixture. Blend well and add cranberries, orange, and nuts. Put in greased loaf pan and bake at 350°F for 1 hour.
