Rice Pudding

Sometimes you just want a comforting dessert and Rice Pudding is exactly right for times like those.

Uncle Ben’s Ben’s Original Rice is often my choice for dinnertime rice (so delicious under Turkey Gravy) but do NOT use it for Rice Pudding. Instead, jasmine rice or leftover Chinese takeout rice work well.

3 eggs, beaten
1 1/2 cups whole milk
1/3 cup sugar
1 teaspoon vanilla
1 cup cooked rice
1/2 cup raisins
a pinch of nutmeg

Set oven temperature to 325°F.

Mix eggs, milk, sugar and vanilla in a bowl. Stir in rice and raisins. Pour mixture into a 1 1/2-quart casserole. Sprinkle with nutmeg.

Place the casserole inside a larger baking dish or pan in the oven. Pour boiling water into the outside container to a depth of 1 inch.

Bake 45 to 55 minutes or until a knife inserted near the center comes out clean. Serve warm or cold.

Serves 6.
