Thanksgiving Lima Beans

These lima beans are another holdover from my mother’s Thanksgiving dinners. Many family members like them and they are easy to make.

3-pound bag of frozen baby (or “tiny”) lima beans
3 tablespoons of butter
3 tablespoons of flour
3/4 cup of whole milk
3/4 cup of water or turkey broth
1 1/2 teaspoons salt
1 teaspoon pepper

Put frozen lima beans in a saucepan and cover with water. Place uncovered saucepan on stove top and bring to a boil. Reduce heat, cover, and simmer for 25 minutes. Drain the lima beans.

Now make the sauce. Melt butter in large saucepan. Whisk in flour. Whisk in milk and water or broth. Cook slowly, whisking frequently until sauce thickens. Add salt and pepper. Add sauce to the cooked and drained lima beans. Taste to see if you need more salt or pepper.
